3/4cup Orzo cooked | |
1lb(s) Arugula | |
1 Large Mango The farmers market has THE best mangos | |
2 Avocado Buy Fresh | |
1/2 Red Onion Always buy organic products if at all possible | |
8oz Cherry Tomatoes | |
1/4cup Chopped Cilantro Buy Organic! |
For Dressing
4tbsp Extra Olive Oil | |
2tbsp Lime Juice | |
2 tbsp Minced Garlic | |
Salt and Pepper I like to leave this to the chef. Sprinkle just enough to savor the flavor but not too much to take away the taste. |
Directions

SALAD
Add cooked orzo to a large bowl.
Then add chopped shrimp, arugula, mango, avocado, onions, tomatoes, and cilantro.

DRESSING
In a separate mixing bowl whisk together, olive oil, lime juice, garlic, salt, and pepper. Mix until well combined.

Pour dressing over salad and gently mix all ingredients. Enjoy!
