3/4cup Orzo cooked
1lb(s) Arugula
1 Large Mango The farmers market has THE best mangos
2 Avocado Buy Fresh
1/2 Red Onion Always buy organic products if at all possible
8oz Cherry Tomatoes
1/4cup Chopped Cilantro Buy Organic!
For Dressing

4tbsp Extra Olive Oil
2tbsp Lime Juice
2 tbsp Minced Garlic
Salt and Pepper I like to leave this to the chef. Sprinkle just enough to savor the flavor but not too much to take away the taste.

Directions

1.

SALAD

Add cooked orzo to a large bowl.
Then add chopped shrimp, arugula, mango, avocado, onions, tomatoes, and cilantro.
Mark as complete

DRESSING

In a separate mixing bowl whisk together, olive oil, lime juice, garlic, salt, and pepper. Mix until well combined.
Mark as complete

Pour dressing over salad and gently mix all ingredients. Enjoy!
