Hey Foodies, This is one of my favorite healthy, hearty, savory salads that is easy to prepare and is always a winner. My corn and black bean salad takes no longer than 15 minutes to prepare. ½lb(s) Shrimp Buy Fresh | |
3ears Fresh Corn You could substitute for 1 ½ cups corn kernels | |
1can Black Beans Rinse and Drain | |
1 Medium Red Bell Pepper Chopped | |
½cup Cherry Tomatoes Halves | |
½ Red Onion Diced | |
1 Avocado |
For Dressing
1/3 cup Olive Oil | |
¼ Cilantro Chopped | |
¼cup Lime Juice | |
1tsp Chili Powder | |
1tsp Cumin | |
1tbsp Paprika | |
Salt and Pepper | |
2tbsp Garlic | |
2 tbsp Honey |
Directions
1.
SALAD
In a large mixing bowl combine, cooked corn, black beans, peppers, tomatoes, onions, avocado, and cilantro.
Mark as complete

DRESSING
In a separate mixing bowl whisk together, olive oil, cilantro, lime juice, chili powder, cumin, paprika, salt, pepper, garlic, and honey. Mix until well combined.

Pour dressing over salad and gently mix all ingredients. Enjoy!
