Fresh Shrimp Mango Avocado Salad

Ingredients

  • ½ lb Shrimp
  • ¾ cup Orzo cooked
  • 1 lb Arugula
  • 1 large Mango
  • 2 Avocado
  • ½ Red Onion
  • 8 oz Cherry Tomatoes
  • ¼ cup Cilantro chopped
  • For Dressing
  • 4 tbsp Olive Oil
  • 2 tbsp Lime Juice
  • 2 tbsp Minced Garlic
  • Salt and Pepper

Instructions

Salad

  • Add cooked orzo to a large bowl.
  • Then add chopped shrimp, arugula, mango, avocado, onions, tomatoes, and cilantro.

Dressing

  • In a separate mixing bowl whisk together, olive oil, lime juice, garlic, salt, and pepper. Mix until well combined.
  • Pour dressing over salad and gently mix all ingredients. Enjoy!
