Garlic Butter Shrimp Scampi

Ingredients

  • 1 lb Shrimp
  • 1 tbsp Olive Oil
  • 1 medium Onion
  • 1 medium Red Bell Pepper diced
  • Salt and Pepper
  • 2 tsp Minced Garlic
  • 2 tsp Italian Seasoning
  • 4 oz Butter melted
  • 1 tbsp Lemon Juice
  • ½ cup White Wine
  • 8 oz Fettuccine Pasta
  • ¼ cup Parmesan
  • ½ cup Parsley chopped

Instructions

  • Preheat oven to 400 degrees ℉
  • Heat olive oil in a medium sauté pan over medium heat, add onions and red bell pepper sauté; until onions are golden and red bell peppers are tender, 5 minutes
  • In a medium casserole dish, combine shrimp, salt, pepper, Italian seasoning, garlic, sautéed onions, and bell pepper, butter, lemon juice, (add thinly sliced lemons, optional), and white wine.
  • Bake for 10-15 minutes, until shrimp turns pink and is fully cooked.
  • Stir cooked fettuccine into the mix, add parmesan and fresh parsley. Enjoy!

Notes

1. If you want to make it creamy add ¼ cup of heavy cream to recipe
