In a bowl, whisk together olive oil, dijon mustard, brown sugar, soy sauce, lemon zest, parsley, thyme, garlic, salt and pepper.
Place pork in a bowl or a resealable plastic bag. Pour marinade over the meat. Marinate in the refrigerator for at least 1 hour, or up to 24 hours. Rotate the pork occasionally so the marinade touches all sides.
Preheat oven to 350°F
Heat the remaining 2 tablespoons olive oil in a large skillet, over medium-high heat. Add the pork to the skillet, spooning over some of the marinade on top of the pork and sear, cooking until all side are browned.
Place into an oven-safe dish. Roast about 20 minutes or until a meat thermometer inserted into the thickest part of the meat reads about 145°F
Remove from the oven and let sit for 10 minutes before slicing. Enjoy!
