Juicy Oven Baked Pork Tenderloin

Ingredients

  • 2 ½ pounds Pork Tenderloin
  • ½ cup Olive Oil
  • 2 tbsp Dijon Mustard
  • 3 tbsp Brown Sugar
  • 3 tbsp Soy Sauce
  • 3 tbsp Lemon Zest
  • 2 tbsp Parsley Leaves chopped
  • 1 ½ tbsp Thyme Leaves chopped
  • 2 tbsp Minced Garlic
  • Salt and Pepper
  • 2 tbsp Olive Oil

Instructions

  • In a bowl, whisk together olive oil, dijon mustard, brown sugar, soy sauce, lemon zest, parsley, thyme, garlic, salt and pepper.
  • Place pork in a bowl or a resealable plastic bag. Pour marinade over the meat. Marinate in the refrigerator for at least 1 hour, or up to 24 hours. Rotate the pork occasionally so the marinade touches all sides.
  • Preheat oven to 350°F
  • Heat the remaining 2 tablespoons olive oil in a large skillet, over medium-high heat. Add the pork to the skillet, spooning over some of the marinade on top of the pork and sear, cooking until all side are browned.
  • Place into an oven-safe dish. Roast about 20 minutes or until a meat thermometer inserted into the thickest part of the meat reads about 145°F
  • Remove from the oven and let sit for 10 minutes before slicing. Enjoy!
