Melt butter in a medium skillet over medium heat. Add onion and zucchini and sauté until zucchini is tender-crisp about 5-7 minutes.
4 tbsp Butter, 1 Medium Onion, 2 lb(s) Zucchini
Put zucchini in a strainer and drain off any excess liquid.
2 lb(s) Zucchini
Cook until browned and crumbly about 5-7 minutes. Drain off any excess liquid. Mix the sausage and zucchini until well combined.
1/2 lb(s) Ground Italian Sausage, 2 lb(s) Zucchini
Add sausage and zucchini mixture to an 8×8 greased baking dish.
1/2 lb(s) Ground Italian Sausage, 2 lb(s) Zucchini
In a medium bowl, add eggs and whisk together. Pour eggs on top of the sausage and zucchini mixture. Sprinkle cheese on top.
3 Eggs, 1/3 cup Mozzarella Cheese
Bake uncovered for 35-40 minutes. Enjoy!
