Cheesy Italian Sausage and Zucchini Bake

Ingredients

  • 4 tbsp Butter
  • 1 Medium Onion Chopped
  • 2 lb(s) Zucchini Grated
  • 1/2 lb(s) Ground Italian Sausage
  • 3 Eggs Beaten
  • 1/3 cup Mozzarella Cheese Shredded

Instructions

  • Preheat oven to 350 degrees (F)
  • Melt butter in a medium skillet over medium heat. Add onion and zucchini and sauté until zucchini is tender-crisp about 5-7 minutes.
    4 tbsp Butter, 1 Medium Onion, 2 lb(s) Zucchini
  • Put zucchini in a strainer and drain off any excess liquid.
    2 lb(s) Zucchini
  • Cook until browned and crumbly about 5-7 minutes. Drain off any excess liquid. Mix the sausage and zucchini until well combined.
    1/2 lb(s) Ground Italian Sausage, 2 lb(s) Zucchini
  • Add sausage and zucchini mixture to an 8x8 greased baking dish.
    1/2 lb(s) Ground Italian Sausage, 2 lb(s) Zucchini
  • In a medium bowl, add eggs and whisk together. Pour eggs on top of the sausage and zucchini mixture. Sprinkle cheese on top.
    3 Eggs, 1/3 cup Mozzarella Cheese
  • Bake uncovered for 35-40 minutes. Enjoy!
