1 Medium Onion Chopped | |
2lb(s) Zucchini Grated Zucchini | |
½ lb(s) Ground Italian Sausage | |
3 Eggs Beaten Eggs | |
1/3cup Mozzarella Cheese Shredded |
Directions

Preheat oven to 350 F

Melt butter in a medium skillet over medium heat. Add onion and zucchini and sauté until zucchini is tender-crisp about 5-7 minutes.
Put zucchini in a strainer and drain off any excess liquid.

Cook until browned and crumbly about 5-7 minutes. Drain off any excess liquid. Mix the sausage and zucchini until well combined.

Add sausage and zucchini mixture to an 8x8 greased baking dish.

In a medium bowl, add eggs and whisk together. Pour eggs on top of the sausage and zucchini mixture. Sprinkle cheese on top.
